Ok. Here's the plan for today's post: Menu Planning!! *Cue Music!*
I'm going to pick out the meals for this week, and then write them down. Might even include ingredient lists. Or recipes. Ready or not, here I come!
Tues: Lemon Herb Chicken Ring Pockets. I've already got the chicken cooked, the green peppers... maybe even the Parmesan. I actually have to cook this up right quick for Handsome's lunch delivery while he's on shift today (not a daily occurrence. I didn't have it ready to pack in his lunch this morning)
Weds: Coconut Chicken Tenders w/o the Marmalade. I like Heinz. And speaking of, how awesome: Heinz has changed my life. Or I might cut them up and put them in mac & cheese. Just being honest here. Used to do that years ago, and it was delicious at the time. I'll let you know how it plays out. If I do, I'll choose the shapes.
Thurs: Slow Cook Thai Chicken. Dante likes this spicy-peanutbuttery-soysaucy flavor. I've never made this before. But I have stuff to do on Thurs, so it will be nice to have my crock pot make dinner for me.
Fri: Left Overs, handsome is on shift. I don't usually cook for just myself. Truth be told, I eat cookie dough and strawberries a lot of the time. Just being honest.
Again.
Sat: BBQ Chicken Pizza. Sort of like the recipe provided, but I always like to tweak it to make it more cheesy and less onion-y. And will I make my own dough? I'm unsure at this moment. I have a hard time working with yeast.
Sun: Spaghetti & Meatball Sandwiches. Its a classic. The sauce, I'm not sure on.
But the meatballs are a winner. I plan to use thin garlic bread.
Mon: Grilled Chicken Salad with french fries and cheese and carrots and ranch. YUM. Might be a favorite.
You may have noticed that we eat a lot of chicken. It was on sale last week. Buy one lb, get one free. Hard to beat (it can be done, 1.79/lb in the great chicken stocking-up of 2010) so I bought a lot. We have some other stuff in the freezer, mostly individually wrapped fish fillets that I refuse to cook because I don't like fish. And really, this "week" of a menu will probably last nearly 2. Things get pushed back and we take a while eating all of it. Who knows, Handsome may eat Thai stuff for 3 days. I'll keep you posted, since this is so gripping.
And also, I feel I must confess that this post is AWE-some for me, because now I don't have to put a list on the refrigerator; its right on here! I may take pictures.
I'm toying with the idea of building a little cookbook on www.blurb.com, and maybe some of those will make it in. Or is that stealing? What if I modify? Oh, the questions...
